Meatloaf Muffins?

Comfort food is really in this year, apparently. In our never-ending quest to provide our Members with useful information, we’ve recently come across several recipe compilations that are all about the comfort factor. However, some are more interesting than others. This one is a doozy:

Muffin Pan Meat Loaf

The good people at McCormick Spices are all about encouraging people to cook at home, (and to use lots of spices). In pursuing that goal, the company puts together a lot of recipes. You can see them One in particular really caught our eye: a recipe for meatloaf muffins.

You read that right; these are muffin-shaped meatloaves cooked on a muffin sheet. They provide a number of handy, single-serving meatloaves in a fun food format! We can see the practical side of this dish. For one thing, we don’t all like the same parts of a meatloaf. Some like the crusty, ketchup-y top, while others prefer the moist center.

With muffin meatloaves, each person gets to savor a good amount of their favorite meatloaf part. Family fights are avoided, marriages are saved, and life becomes a bit more satisfying.

OK, that’s getting a bit dramatic, but c’mon, how cool are meatloaf muffins? Even vegans can enjoy the concept by substituting non-meat ingredients. So, without further ado, here is McCormick’s recipe:

“Make delicious meat loaves in a muffin tin for built-in portion control. Opt for 95 percent lean ground beef and season with 3 teaspoons of total spices and herbs – like a salt-free garlic and herb seasoning and oregano – for every 2 pounds of meat. Let your family customize their individual loaves with tasty toppings, like salsa, gravy and tomato sauce.

Recipe Description

These individual meat loaves cook in less than 30 minutes, perfect for an easy weeknight dinner with built-in portion control. Grated carrots and zucchini in the meat loaf mixture add moisture and are a tasty way to eat more veggies.

Serves: 12

Ingredients: 2 pounds lean ground beef; 1/2 cup grated carrots; 1/2 cup grated zucchini, 2 eggs, lightly beaten; 1/2 cup milk; 1/4 cup dry bread crumbs; 2 teaspoons McCormick Perfect Pinch Salt Free Garlic & Herb Seasoning; 1 teaspoon McCormick Basil Leaves; 1/2 teaspoon McCormick Oregano Leaves.


2 cups no salt added tomato sauce; 1 teaspoon McCormick Oregano Leaves; 1/2 teaspoon McCormick Garlic Powder; 1/2 teaspoon McCormick Red Pepper, Crushed.”

That’s nice, but we noticed that McCormick left out the all-important oven setting! We’ll fill that bit in, since it can mean the difference between doom and delicious in any recipe. Now, perhaps you’ve discovered that the juiciest meatloaves occur when you use higher heat (375 degrees or so). We would NOT recommend doing this for the muffin version, since they are so small. Use 325-350 degrees F instead, (depending on your oven, and the number of meat-muffins you are cooking). Keep an eye on these little guys, since they cook fast.
